The Italian Harvest: Tomato Passata & Fresh Pasta

Capture the peak of the summer harvest! In Italy, late August is the time for “La Conserva “the beloved annual tradition of gathering together to jar the abundant tomato harvest for the winter.
In this highly interactive, communal class, Chef Fabio will guide the group through the authentic process of making passata (traditional, silky-smooth Italian tomato puree).
The Passata Process: We will learn the hands-on methods of washing, crushing, milling, and properly canning massive amounts of fresh, local summer tomatoes.
Fresh Pasta Making: While our jars are processing, we will roll up our sleeves to craft fresh, handmade pasta from scratch, pairing it with a fresh tomato sauce to enjoy together in class.
The Harvest Takeaway: We will be making a large batch of passata together, and at the end of the evening, we will split up the yield! Every student will go home with their own freshly canned bottles of liquid summer to stock their pantry.
