Fresh, local asparagus is a seasonal treat well worth waiting for. Now’s the time to take advantage of its superlative flavor and reasonable price by serving these tasty, tender shoots in as many ways as possible. Learn how to handle both “pencil” asparagus and the thick, meaty “jumbo” variety, using the best cooking methods for each. We’ll blanch, grill, steam, and stir-fry this most prized of vegetables, and then feature it in dishes both traditional and modern. Recipes include Creamy Penne with Asparagus and Prosciutto, Sesame Shrimp and Asparagus Stir-Fry, Grilled Asparagus and Salmon with Tarragon Mayo, and Asparagus Vinaigrette with Poached Egg and Crispy Bacon.
