Learn the secrets of authentic Chinese stir-fry in this fast-paced, hands-on participation class. First you’ll prep ingredients using traditional cutting techniques, marinating, and “velveting.” Then you’ll step up to the stove to experience wok hei—high-heat searing that produces true stir-fry flavor. Once you master basic stir-fry, you’ll discover the stir-fry/braise method, and create regional pan sauces. Recipes include Ginger-Sesame Asparagus, Fujian Pepper Steak, Cantonese Velvet Chicken with Broccoli, and Sichuan Ma-La Shrimp.
