Elevate your mastery of Mexican antojitos by creating “little cravings” made from masa de maíz, a soft and supple corn dough. Learn to mix the dough from masa harina, a corn flour product readily available in supermarkets. Use a tortilla press to make handmade tortillas, as well as the shells for authentic pan-fried quesadillas and empanadas. Form the masa into sopes, crispy little masa cups that hold a variety of fillings and salsas. Recipes include Cheese and Poblano Chile Quesadillas, Beef Picadillo Empanadas, and Sopes with three fillings: Beans and Chorizo; Shrimp and Guacamole; and Chicken Verdes con Crema.
