In Mexican Spanish, antojito means “a little craving.” More specifically, the term antojitos refers to a wide variety of Mexican dishes based on masa de maíz, dough made from nixtamalized corn. This class focuses on popular preparations made with quality, commercially-produced corn tortillas. You’ll learn to make authentic braised-and-shredded fillings; cooked sauces made from dried chiles and chile pastes; and fresh salsas. Recipes include Guajillo Pork Tacos, Red Chile-Cheese Enchiladas, and Crispy Chicken Flautas.
